Slow Cooked White Chicken Chili


Single mom, travels over 3 states for work, and likes long walks to the fridge. If this sounds like you then you will appreciate my infatuation with one pot slow cooked meals. Waking up or coming home to chili? Priceless. This recipe includes a cheat…the supermarket spice pack. Make it, eat it, add avocado, love it. Keep it simple and hearty mid-week.

Extremely Simple and Easy Slow Cooked Chili Recipe
Recipe type: Slow Cooker
Cuisine: Dinner
Serves: 6 servings
  • 3-4 Chicken Breasts
  • 1 can White Canelli Beans, drained
  • 1 cup Corn
  • 1 small white onion, diced
  • 1 large Yellow or Russet potato, diced
  • ⅛ cup Parsley, chopped
  • 1 package McCormick White Chicken Chili Spice Mix
  • Salt and Pepper to taste
  • Sour Cream, Cheddar Cheese and Avocado for garnish
  1. Place all ingredients in slow cooker besides the chicken.
  2. Place the chicken breast on top. Season with salt and pepper.
  3. Slow cook on low for 6-8 hours or on high 3-4 hours.
  4. Within last hour pull out the chicken and shred with two forks making a crisscross motions.
  5. Return shredded chicken to pot and stir.
  6. Serve, garnish and enjoy!
