Slow Cooked White Chicken Chili

- 3-4 Chicken Breasts
- 1 can White Canelli Beans, drained
- 1 cup Corn
- 1 small white onion, diced
- 1 large Yellow or Russet potato, diced
- ⅛ cup Parsley, chopped
- 1 package McCormick White Chicken Chili Spice Mix
- Salt and Pepper to taste
- Sour Cream, Cheddar Cheese and Avocado for garnish
- Place all ingredients in slow cooker besides the chicken.
- Place the chicken breast on top. Season with salt and pepper.
- Slow cook on low for 6-8 hours or on high 3-4 hours.
- Within last hour pull out the chicken and shred with two forks making a crisscross motions.
- Return shredded chicken to pot and stir.
- Serve, garnish and enjoy!
