You’ll love how quick this comes together. Place all ingredients in and pulse until smooth. You can add more or less basil or walnuts depending on the taste you’d like it to have!
Method for Mixing the Salad
Finely chop all of the salad base ingredients including the cabbage, cucumbers, green onions and chives. Place in a large bowl. Toss with your hands or a large spoon.
Once the dressing is made, pour over the salad base and toss again. All ingredients should be equally combined with the salad base fully coated by the dressing.

Ingredients
- 1 Head of Cabbage
- 2 Cucumbers
- 1 Bunch Green Onions
- 1 Bunch Chives
For the Dressing
- 1/2 cup Extra Virgin Olive Oil
- 1/4 cup Walnuts
- 1/2 cup basil leaves
- 1 cup spinach
- 1 shallot, finely diced
- Juice of 2 lemons
- 1/4 cup parmesan cheese (substitute nutritional yeast if making vegan)
- Salt and Pepper
Instructions
- Finely chop all ingredients for the salad base including cabbage, cucumbers, chives and green onions. Place in a large mixing bowl and set aside. U
- Using a food processor, place all ingredients for the dressing. Pulse until all is smooth.
- Pour the dressing over your salad base and mix until everything is coated evenly with the dressing.
- Serve immediately as a main salad or with tortilla chips!
Notes
This salad will keep up to 48 hours when stored in the refrigerator.
You can add in more or less basil or walnuts to your taste.
