Are you on that cauliflower craze yet? While I do not believe there is ever a substitution for mashed potatoes…one of the best comfort foods ever imaginable…I do believe in mixing up your veggie routine every now and then. Move over asparagus. The key to your child shoveling a bowl of veggies takes just one ingredient, freshly grated parmesan cheese.
Roasted Parmesan Cauliflower

Ingredients
- One head of fresh cauliflower, florets sliced horizontally
- 2 tablespoons melted butter
- 1 tablespoon EVOO
- Salt and pepper to taste
- ½ grated Parmesan cheese
- Handful of chopped fresh parsley
Instructions
- Preheat oven to 400 degrees.
- In a large bowl, toss the cauliflower with EVOO, butter and salt and pepper to taste.
- Transfer the cauliflower to a baking sheet or pan in a single later.
- Roast until tender for about 28 minutes.
- Remove from oven and sprinkle with parmesan cheese and parsley.
- Roast for 5 more minutes until cauliflower turns golden brown and cheese is melted.
- Remove from oven and enjoy the crusty, buttery flavor.
Although I’m not a cauliflower fan I really want to try this recipe. Maybe it will change my mind abut it. It looks really delicious. xo
