Strawberry Celebration Pound Cake

For Mia’s first birthday I made this Strawberry Celebration Pound Cake and it was nothing short of simple perfection. I know, I know the first birthday is supposed to be full of hoopla. However a day at the beach and blowing out her first candles with the help of her big sister was as easy and happy as her birthday needed to be. So proud of our little Leo.

Traditionally pound cake is in a loaf or a bunt cake pan but I used two 9″ rounds and stacked them with plenty of whip cream and berries in between. Yes, I said whip cream. Easiest route ever. Mia loves berries and I envisioned this to be right up her alley and got baking away.

I love that you can make this as many layers are you choose. You can divide evenly into 4 thin pans for 4 layers, 3 layers or stick to 2 like I did. You really can’t go wrong. Layer on end whip cream and chop fresh berries. Don’t just go to the store for berries, go to the farmers market or even better, the orchard and pick them yourself. This summer I have been visiting the farmers market twice a week to meet Mia’s berry demands. You can taste the difference in locally grown vs shipped berries.

This cake is perfect for any celebration or just because…cake all day every day! The recipe is inspired by Martha Stewart’s pound cake recipe.

Strawberry Celebration Pound Cake

Ingredients
  • 1 cup sliced fresh strawberries
  • ¼ cup fresh blueberries
  • 1 tub of Cool Whip Whip Cream
  • 3¼ cup flour
  • 1 tablespoon salt
  • 4 sticks of butter
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 8 eggs
Instructions
  1. Preheat Oven to 350 degrees and grease two 9 inch round pans. (more if you want additional layers)
  2. Mix the butter, sugar and vanilla until fluffy.
  3. Add in egg and beat until smooth with electric stand or hand mixer.
  4. Slowly add in flour and salt and mix until smooth.
  5. Pour evenly into your number of pans and bake for about 65 minutes.
  6. After cake has completely cooled, use a spatula to coat the top of one layer with cool whip.
  7. Leave the sides of the cake bare.
  8. On top of the cool whip, please the sliced strawberries.
  9. Add another layer of cake.
  10. On your top layer, generously add cool whip and arrange strawberries and blueberries on top.
