The Story Behind the Cocktail
Step into the hum of the room at bartaco and the stress of the day immediately washes away. With a coastal vibe and laid back atmosphere, bartaco brings upscale street food to meet high quality hand crafted cocktails. Sliding into the table of fellow bloggers, I had the pleasure of hearing Gretchen Thomas, Wine and Spirits Director for Barteca Restaurant Group, share her passion for creating craft cocktails. Personally curating bartaco’s tequila list of over 25 tequilas is just one of the many contributions Gretchen has made to bartaco’s impressive cocktail menu as Wine and Spirits Director for Barteca Restaurant group.
Gretchen shared with the group the inspiration behind the popular “Red Sonja” cocktail at bartaco. “Red Sonja was a fantasy/thriller action movie in the 80s starring Arnold Schwarzenegger (back in his beefy he-man days!) The heroine was Sonja, a fiery redheaded warrior. This drink, too, is bright red and spicy, with Jalapeno and ginger, plus a slight bitterness of Byrhh Quinquina, which is a little bit like a vermouth.” Gretchen also shared with us, this was her nick name in high school. With quick wit and a contagious passion for her work, it’s no wonder.
The cocktail tasting continued with handcrafted margaritas to herb infused liquor all starting with fresh pressed juices. Unveiling the new ‘secret taco’ (be sure to ask about it!) and chowing down with great company was a great way to kick off spring and learn about the ‘bar’ in bartaco.
Perfect for the weekend, I’ve scored the recipe for the Red Sonja to share with you as patio weather warms up!
Ingredients
Tequila
Wine
Ginger
Bitters
Simple Syrup
Jalapeno and Lemon for garnish

- 3 “coin size” slices of Ginger
- ¾ oz. simple syrup
- 1 jalapeno slice
- 1 oz. lemon juice
- 1 oz. Bryhh Quinquina Wine
- 1 oz. Olmeca Altos Reposado Tequila
- 2 dashes Peychaud’s Bitters
- Garnish – lemon wheel on a skewer
- Add ginger and simple syrup to small shaker and muddle. (important, do not add the jalapeno to this step as it will create too much heat in the cocktail)
- Add the remaining ingredients to the cocktail shaker
- Fill the shaker to the top with ice
- Shake to incorporate
- Double strain into a highball glass with ice
- Garnish with lemon skewer
