This recipe is for Easy Cheesy Bean Dip.
In my opinion, it’s always time for Taco flavored and inspired dishes but around Cinco De Mayo is when you can really turn it up a notch to celebrate! This super easy, super cheesy bean dip is a hit and has all the good things in it!
It takes about 10 minutes to chop produce and whip up, 12 minutes in the oven and then you’re the hero of the day with warm, gooey, perfect cheese pull stretchy bean dip!
Ingredients Matter
When the recipe is this simple I love to use premium ingredients. It really ensures that your dish is flavorful. One of the toppings I’m picky about is tomatoes. Nothing tastes like a tomato straight out of tomato season. What if it’s not tomato season?! Then go for the good stuff! You want to use tomatoes grown here in the us as that means they are fresher. One brand of tomatoes I love and are delicious is Backyard Farms Tomatoes out of Maine.

One tip to getting a great cheese pull is to use large shreds of cheese. You want the cheese to stick together to be able to pull but also pull apart as it should.
Yes! Be sure your refried beans are vegetarian refried beans.
You can add ground beef or pulled chicken, avocado and sour cream, really the sky is the limit!
Easy Cheesy Bean Dip
This Easy Cheesy Bean Dip is sure to be a crowd pleaser or the perfect recipe for Cinco De Mayo!
Ingredients
- 1 Can of Refried Beans
- 2 Cups of Shredded Cheddar Cheese
- 1 Package of Cream Cheese
- 2 Green Onions, Chopped with whites and greens separated
- 1 Jalapeno Pepper, minced
- 1 Packet Taco Seasoning
Toppings/Garnish
- Fresh Cilantro
- Diced Tomatoes
- Green Onions
- Sour Cream
Instructions
- Preheat your oven to 375 degrees.
- In a large bowl combine beans, 1 cup of shredded cheese, cream cheese, whites of green onions and jalapeno.
- Using a hand mixer, mix until well combined and smooth.
- Place into an oven safe dish. Top with remaining 1 cup of shredded cheddar cheese.
- Bake for 10-12 minutes until cheese on top is melted and bubbly. Do not let it brown.
- Remove from oven and top with your favorite garnishes.
- Grab a chip and dig in! Serve immediately.
Notes
This recipe can be adjusted to your liking. Too little cheese? Too much? (is that a thing?!) then go ahead and adjust to your preferences.
As oven temperatures vary, watch your dish to ensure the cheese does not start to burn.
Use your favorite toppings and pile them high or just dip as is. Both are great ideas.
